]]>All you needs for this is some great quality salmon from WWW.FIshfoodies.com
To prepare the fish you're going to to need to score the back. Three shallow cuts will work on the skin side of your salmon. Then shake your Dudes Blackened on the salmon to your liking. Then when your pan is smoking add a small amount of oil to your pan and gently place your salmon in the pan face down. Let it cook on medium low heat for 4 minutes a side. Then remove the salmon and get ready for your sauce.
The sauce is easy it's 2 chopped anchovy filets, a handful of halved cherry tomatoes, finely chopped shallots, or red onion, some capers, and two tablespoons off butter.
Cook your sauce until the tomatoes release some water and become wilted, then cut the heat and add the butter. Whisk the sauce until the butter becomes thick and creamy. Now pour over your salmon and garnish with scallions.

What your going to need!
So this one is easy... first were going to season our Steak with our Espresso Seasoning on both side, and don't forget the fat strip also!\
Then when your pan is smoking squirt some Oil in there.
Now place your steak in the oil away from you... if your using a steak my size and it has been rested properly all you need is 2 1/2 minutes a side. add your butter on the second side and baste. When its done take it out of the pan and let it rest on the side or on a cutting board.
Crack three eggs into a bowl and when the pan is smoking again gently place your eggs into the hot oil. Were going for a crispy egg so hi heat and fast. don't touch the eggs it will cause them to stick. after 90 seconds the whites should be cooked so you can baste your yolks. then gently remove them and place them next to your steak salt both your steak and eggs... now boom you have a Breakfast that's fit for a Cowboy!!

]]>So the First thing we have to do is Crisp up our Chorizo. So throw it in a non-stick pan with a little Olive oil and render all the fats out. You're going to want your Chorizo crispy but not burned. When all the oils have been released from your chorizo drain the oil into a reserve bowl. were going to save that and sear our scallops with it.
Now in that same pan with cooked Chorizo throw in your Scallions, Garlic, and Pepper. Add a Little Salt and keep it moving. We want it cooked with not a lot of color.
Now Squeeze in a Lime and Add your Corn. Let that go for another 6-8 mins tossing occasionally. let sit for 5 mins and stir in your Butter-milk.
Now we can prep our Scallops. First were going to pat them dry. We cant get a good crust if your scallops are wet. So remember Wet Scallops are Bad Scallops! Now were going to season the scallops on one side only, the side with the most Surface area.
Now when your pan is Ripping hot (smoking) Add your reserved Chorizo oil and 1 Tablespoon of Olive Oil. Now in a Clock wise motion add the scallops seasoned side down. Don't let them cook for longer then 2mins. Now flip them all leaving some room at the bottom of the pan to add your butter, turn the heat off, and Baste your scallops in butter.
Plating is simple take 2-tablespoons of your corn mixture for every Scallop you plate then drizzle some of those pan oils over the top and enjoy!
if you have any questions Just watch the video below!
this Dish is super Easy... here's a list of what your Gunna need!
First you want to make sure you get your Octopus super dry. (this is super important, your octopus will be chewy and or slimy if its not dry.)
Next your going to want to take a skewer and Manipulate the Octopus in the shape you would like to plate it. (I usually do pin wheels)
then you want to season it with Your Dudes Blackened Seasoning, and set it off to the side.
then you want to start pan frying your Chorizo, Garlic, and White Onion. When you start to get some color on them throw in your capers and set it off to the side.
When your grill pan is smoking you can Put in your octopus pinwheels. I also add some weight on top to make sure I get a nice char on it. let it cook on each side for 2 Mins.
Now its time to Plate.
on the bottom of the plate spread your Humus, then take a nice scoop of your Chorizo, onion, garlic, and caper mixture, and scoop in on the bottom.
Then add your Octopus, then some more of your Chorizo mixture, your fresh parsley, some radishes, them smoked sea salt, and olive oil...

If I am being honest... This salad is so unique and different, I could probably eat it a few times a week by just changing up the protein. (see below for other protein options)
So let us start with the Chicken...
I went and grabbed a 10 oz chicken breast, and then I put it in a Zip-Lock bag to reduce chicken splatter, I then took my meat hammer and got my chicken as this as I possibly could with minimal tearing.
After removing the chicken from the bag, I smothered it in mayonnaise. Now it was time for our Dudes Flippin The Bird Seasoning. I proceeded to shake my Dudes all over the chicken and then moved it into a hot grill pan. (you can also use a barbeque if you like) This is going to cook fast, about 3.5 mins a side.
While your chicken is on the grill you can start getting the salad ready.
Red leaf Romaine is my favorite... so if i make a salad this is usually my base.
Cut your greens into your preferred size. I like my salads chopped pretty fine.
when you are done toss it into a mixing bowl.
now slice 1/3 of a red onion thinly into strips
half about 20 cherry tomatoes
turn 5 raddishes into match sticks
grab a handful of nuts... I like smoked almonds.
when you have everything toss it in the bowl with your greens. Now, wait for the chicken to finish cooking.
When your chicken is done cooking grab a plate so we can start building our Dudes Flippin Chicken Salad.
Place your chicken on the plate.
now grab your mixing bowl and add 3 Tbs of your favorite olive oil and some aged balsamic, now get your hands in there and mix it up.
Now take a hand full and put it on top of your chicken.
the final step is to top it off with your Favorite Sea salt... I'm always using Tasman!
This Salad is a great starting point if you wanna eat healthily. If you're feeling lazy you can have a big container of the salad mix in the fridge and dress it as you need. I tend to make enough salad for around 3-4 portions, and ill eat it a few times a week. You can also have your proteins ready and make #healthy salads for lunch all week.
~Other Protein options~
Pork-With Dudes Signature Pork Seasoning
Steak-With Dudes Cow Tipping Seasoning
Shrimp-With Dudes Mojo Seasoning
Salmon-With Dudes Wild for Salmon Seasoning
Eggs-With Dudes Bourbon Maple Hops

Ok for this you are going to need to finely chop 1/4 of the following vegetables.
Red onion, green pepper, red, pepper.
Then we're going to throw them into a pan on high heat until everything is golden brown. Now we need to pick some protein. (I like using ham and prosciutto) but you can really use anything you want. Chop your protein and get them in the pan with the vegetables.
When everything looks nice and crispy pour in your 4 beaten eggs, and mix until 3/4 cooked. now shake in some Dudes Honey Chipotle Seasoning and fold until your eggs are cooked completely!
Now grab a bowl and empty the pan.
Drop your tortilla into the pan and drop it to medium heat. Spread the cheese around the tortilla evenly. (I like American and Pepper Jack) load your quesadilla with the egg mix and fold it in half. Then continue to flip the Quesadilla back and forth until its brown and crispy.
Now you can eat this on the way to work, or you can sit on the couch and enjoy this while Netflixing and recovering from your night out!
~ProTip cut all your vegetables in advance its the most time-consuming part of this recipe and probably the most dangerous when you've been drinking!

Let talk tacos!
These Roasted Salmon tacos are simple to make, and also light so you'll have plenty of room for Margaritas next Taco Tuesday!
First, you need to grab a cooking/baking sheet and throw some tin foil down on it. This is going to help you with easy cleanup and to make sure the Salmon won't stick. When you have that ready put your Salon on the Tinfoil and grind lime all over the top of it! Now its time to #ShakeYourDudes Signature Salmon Seasoning all over it! Then Take half the lime you zested and squeeze half all over the salmon!
Now wrap your favorite tortillas in Tinfoil and get them in the oven with the salmon. *425 for 16-18 mins
Now for the Slaw. This slaw is tangy, crunchy, salty, and goes absolutely fantastic with all types of fish, but can also be used for chicken or lamb tacos as well.
You need 1/4 head of shredded red cabbage, 1 thinly sliced seeded English cucumber, a handful of fresh chopped dill, 1/2 cup red wine vinegar, 2 tsb mayo, and your favorite salt.
Combine everything into a mixing bowl and refrigerate for an hour.
I'm not going to lie, I used store-bought guacamole for these tacos and it was fantastic.
now to build your tacos. we start from the tortilla and we build up.
1) Guacamole
2) flake Salmon Using a fork
3) Slaw
4) your favorite hot sauce
5) insert taco in mouth and eat!
If you get caught up at all watch the video below!
These tacos are a game changer! they are also not so bad for you! enjoy Dudes!
]]>First things first here! We're going to cut our steaks into manageable pieces. I use a 10 inch grill pan so mine are cut a little smaller then that!
Next, Grab a ziplock bag and throw your meat inside!
Next, add 1 Tablespoon of your favorite teriyaki sauce, and shake your Dudes Korean Seasoning inside, then start rubbing your meat. Set it aside to let the sauce and seasoning penetrate the meat!
Now grab your Bok Choy! We're gonna Cut those guys vertically and line them up on your cutting board then your gonna need to find some Sesame oil, olive oil, and Tasman Smoked Sea Salt.
Then we're going to brush the Bok Choy with your oils and lightly dust them with your Smoked Sea Salt! Wait for the grill to be smoking hot - no really wait for it to smoke!
Then grill your Baby Boks for around 4 Mins each side! Flip them a few times until they’re where you like them!
Now plate those guys down (make a cool design. I like to cross them over each other) Sprinkle your Dudes Everything Minus the Bagel Seasoning on top, and add some small drops of Sriracha.
Now its time for your Skirt Steak! Drop those steaks Down on the grill! Skirt steak only needs 2-3 Mins per side! So don’t go anywhere! Flip them one time and then Drape them over your Baby Bok Choy!
If you can find some Scallions to garnish them with more power to you, if not all good! If this takes you more then 20 Mins you’re doing something wrong!
Having trouble? Just watch the video below I'll help you out Dude!
This is a great meal to have prepped in advance. You can have your meat marinated for up to two days!
This is also a good starting point for rookie cooks that are trying to impress a girl or just not trying to eat garbage all the time! You can also totally chop your steak and Bok Choy to make some Killer Tacos!
